Spices like cumin, turmeric, cardamom, cloves, and others are used to make vegetable biryani, giving it a flavorful and complex scent. Layers of texture and flavor are added by ingredients like vegetables, basmati rice, and occasionally nuts or raisins. It’s an adaptable recipe that can be readily modified to accommodate a range of palates, levels of spice, and nutritional needs. So let’s start with the list of ingredients we will need. We will do the prep for the rice first. Here is what we will need:

  • 2 cups basmati rice
  • 4 cups water
  • 1 cinnamon stick
  • 4 green cardamom pods
  • 4 cloves
  • 1 bay leaf
  • Salt to taste

For the vegetable layer:

  • 2 tablespoons ghee or vegetable oil
  • 1 large onion, thinly sliced
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, slit lengthwise
  • 1 cup mixed vegetables (carrots, peas, green beans, etc.)
  • 1/2 cup diced potatoes
  • 1/2 cup diced cauliflower
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder

Salt to taste

Fresh cilantro leaves, chopped, for garnish
Fried onions for garnish (optional)
Prep time needed: 30 minutes
Preparation before we start: Wash and soak the rice for 30 minutes

Instructions:

Once our rice is done with the pre-soak we will start the following steps:

1. In a big pot, heat 4 cups of water to a boil. Mix in the soaked and drained basmati rice, entire spices (cinnamon stick, cardamom pods, cloves, bay leaf), and salt. Cook until the rice is 70–80% done. Drain the rice and set it aside.

2. In a separate skillet or saucepan, heat the ghee or vegetable oil over medium heat. Add the cut onions and cook until golden brown and caramelized.

3. Stir in the ginger-garlic paste and slit green chilies into the onions. Sauté until aromatic, about 1-2 minutes.

4. Transfer the mixed veggies, diced potatoes, and diced cauliflower to the pan. Stir thoroughly to coat the vegetables in the onion mixture.

5. Add cumin seeds, ground coriander, garam masala, turmeric powder, and salt to the vegetables. Mix thoroughly to ensure that the spices are evenly distributed.

6. Spread the partially cooked rice evenly over the spicy vegetable mixture in the pan.

7. Cover the skillet with a tight-fitting cover and cook on low heat for 15-20 minutes, or until the flavors merge and the rice is fully cooked.

8. When finished, gently fluff the vegetable biryani with a fork, combining the rice and veggies without breaking the grains.

9. To add flavor and visual appeal, garnish with freshly chopped cilantro leaves and fried onions.

10. Serve hot with raita and your favorite Indian pickle for a complete and fulfilling dinner.
